Saffron Pudding

Saffron Pudding is a tasty and easy dessert recipe. It is one of my favorite dessert. We have a Catholic friend in our neighbor. Every year they make awesome dishes in Christmas and offer it to us. This time I decided to surprise them by making saffron pudding. I knew that they had some guests at their home so I made it a little more. Just as I thought they were very glad when I offered it to them. Seeing them even I felt very happy.

In the evening when I met my friend she told me they all loved it very much. She and her guests were asking for the recipe I was so pleased with it. I got this pudding recipe from my sister-in-law.

How To Make Tasty And Easy Saffron Pudding?

Saffron Pudding

Ingredient


Milk - 500 ml
Corn Flour - 3 Tbsp
Sugar - 7 Tsp (Or As Per Your Taste)
Saffron - 12 to 15 Strands
Cardamom Powder - 1/2 Tsp
Almond - 5
Cashew Nut - 5
Pistachio - 5

Instruction


In a bowl take 1/4 cup of milk, add corn flour and mix well. There should not be any lumps left.

Heat a pan and add remaining milk. When the milk gets warm remove 2 Tbsp of milk in a small bowl and add saffron strands. Mix well and keep it aside.

Cook the remaining milk in the pan till it comes to boil.

Now add cornflour mixture and mix well. Keep stirring to prevent the milk from getting burnt.

Now add saffron mixture, sugar and cardamom powder. Cook till it gets thickened. Switch off the flame and let it cool down.

Transfer the pudding to serving bowl and refrigerate it for 2 - 3 hours.

Before serving garnish it with chopped almonds, cashew nuts and pistachios.

Mumbai Veg Sandwich

Veg Sandwich is a popular street food of Mumbai. You can find this sandwich almost in every corner. It is one of my favorite street food. All that you need to make this dish are bread, butter, green chutney, potato, cucumber, beetroot, tomato, onion, chaat masala and black salt. You can even use sandwich masala instead of chaat masala and black salt that is readily available at the store. You can also make sandwich masala powder at home. I will post the recipe of Sandwich Masala Powder soon.

Vendors normally use white bread but today I have used brown bread. You can use any bread of your choice. You can have this as breakfast or snacks. It is very tasty and easy to make recipe. If you are from Mumbai you must have tried this dish but if you are not and ever happens to come down to Mumbai, do give this dish a try. I am sure you will fall in love with it. Till then just try this at your home and enjoy the dish.

How To Make Mumbai Veg Sandwich?

Mumbai Veg Sandwich

Ingredients


Brown Bread - 6 Slices
Butter - As Required
Potato - 1 Large Size
Onion - 1 Large Size
Cucumber - 1
Tomato - 1 Large Size
Beetroot - 1
Chaat Masala - As Required
Black Salt - As Per Taste

For Green Chutney


Coriander Leaves - 1/2 Cup
Green Chili - 2
Ginger - 1/2 Inch
Salt - As Per Taste


Instructions


First pressure cook potato and beetroot till 3 whistle.

Meantime lets make green chutney. Wash coriander leaves.  In a blender add all the ingredients listed in green chutney i.e. coriander leaves, green chili, ginger and salt. Grind it till smooth without adding water as the washed coriander leaves are wet and thus they release water while grinding.

Now peel off the skin of potato and beetroot and cut it to thin slices. Slice onion, cucumber and tomato too.

Take two slices of bread and spread butter on one side of both the bread. Remember the butter should be at room temperature.

Now spread green chutney on both the slices of bread.

Then on one bread, place few slices of cucumber. Sprinkle a pinch of chaat masala and black salt.

Place few slices of tomato and sprinkle a pinch of chaat masala and black salt.

Place few slices of onion and sprinkle a pinch of chaat masala and black salt.

Then place few slices of beetroot and sprinkle a pinch of chaat masala and black salt.

Lastly, place few slices of potato and sprinkle a pinch of chaat masala and black salt.

Now cover with the other bread on which we have spread butter and green chutney.

You can slice the sandwich in whatever shape you want.

Top it with some chutney and ketcup.

Egg Pulao

As I have already mentioned in my previous post that my family always craves for egg. We almost love anything that is made from egg. Today I am sharing with you Egg Pulao. You can even name this One Pot Egg Pulao. This pulao is made with boiled egg. You can add some veggie too like carrot, beans, peas etc but I was falling short of veggies so didn't add it.

I made this when my mom was hospitalized few weeks back. During this time we hardly used to get time to cook a complete meal. We even didn't used to get time to go to the market to buy veggies. One day while I was looking for veggies in the refrigerator there was none available except some eggs. So I made this dish as it takes very less time to make and is loved by everyone at home.

How To Make Egg Pulao?

Egg Pulao

Ingredients


Basmati Rice - 1 and 1/2 Cup
Eggs - 8
Green Peas  - 1/2 Cup
Onion - 2
Tomatoes - 2
Ginger Garlic Paste - 1 and  1/2 Tbsp
Bay Leaf - 2
Cinnamon Stick - 1 Inch
Cloves -5
Black Pepper - 1/2 Tsp
Black Cardamom - 2
Red Chili Powder - 1 Tsp
Turmeric Powder - 1/4 Tsp
Salt - As Per Taste
Hot Water - 3 Cup
Ghee Or Oil - 2 Tbsp + 2 Tsp

For Marinate


Ginger Garlic Paste - 1 Tbsp
Red Chili Powder - 1 Tsp
Turmeric Powder - 1/4 Tsp
Salt - As Per Taste

Instruction


First chop onion length wise, chop tomatoes finely and boil 6 eggs. Rinse rice thoroughly and soak it in water. Keep it aside.

Now cut the egg in halves. In a bowl mix all the marination ingredients and add in eggs. Mix well and keep it aside for atleast 15 mins to marinate. 

Now in a pan add 1 tsp oil and shallow fry the eggs.


Now heat a pan, add 1 tsp oil. Keep the flame on low. Beat 2 eggs and once the oil is hot, pour beaten eggs to the pan. Add salt and mix it well so that it gets scrambled. Cook till done. Keep it aside.

Now heat a sauce pan and add 2 tbsp of ghee or oil. Keep the flame on low. Once the ghee or oil is hot add bay leaf, cinnamon stick, cloves, black pepper and black cardamom. Saute it for a min or till you get a nice aroma.

Now add in onion and saute it till it turns transparent or slightly brown.

Now add ginger garlic paste and cook till the raw smell of ginger and garlic goes away.

Add turmeric powder and red chilli powder. Mix well.

Now add tomatoes and cook till it turns soft and tender.

Now drain the water and put the rice in the sauce pan. Mix well.

Now add green peas and mix well. Cook for a min.

Add hot water and salt. Mix well. Cover the pan with a lid and cook till the water is absorbed completely and rice is cooked

Now add scrambled eggs  and coriander leaves to it and mix gently or else the rice will become mushy.

Place fried egg on the top of rice and cover the pan with a lid. Cook for a min. Switch off the flame.

Rava Upma

Rava Upma is a one of the easiest Indian breakfast. We often make this dish at home. It is made with semolina, you can even add in some veggies if you wish. I have even added little sugar as we prefer slightly sweeter version but you can skip it.

You can even have this as a tea time snacks. It hardly takes 15 mins to make this dish, so if you are in hurry then this is the best dish to make for breakfast or snacks.

How To Make Rava Upma?

Rava Upma

Ingredients


Rava / Semolina - 1 Cup
Grated Coconut - 1/4 Cup
Onion - 1 Medium Size
Green Chili - 2
Mustard Seeds - 1/4 Tsp
Urad Dal - 1/4 Tsp
Curry Leaves - 6
Sugar - 2 Tsp
Chopped Coriander  Leaves - 1 Tbsp
Hot Water - 2 Cup
Salt - As Per Taste
Oil - 1 Tbsp

Instruction


First finely chop onion and green chili. Heat a kadai and roast rava for 1 min or till you get a nice aroma of rava. Don't roast for longer time or the color of rava will change. Once done transfer it to a bowl.

Now in the same kadai add oil. Once the oil is hot add mustard seeds and urad dal. Let it splutter. Now add onion and cook till it turns transparent. Add green chili and curry leaves. Cook for 1 more min.

Now add rava/semolina and mix well. Pour hot water, add grated coconut, sugar and salt. Mix well. It will start thickening and will absorb the water. Now cover the lid and cook till done.

Now add in coriander leaves and mix well.

Your Rava Upma is ready to serve.

Coconut Ladoo
After a long break I am back again. I was quite busy for last few weeks as my mom was hospitalized. Those were really very stressful weeks. Well she is back home and I am feeling great. Today I am sharing with you my favorite Coconut Ladoo, which I had made on Ganesh Chaturthi but couldn't post it on blog due to my busy schedule.

It is very easy and quick to make. You can even call it as instant coconut ladoo. With just 2 ingredients you can make these tasty ladoos. You can offer this as a prasadam or have it as a dessert.

So lets begin with the recipe...

How To Make Coconut Ladoo ?

Coconut Ladoo

Ingredients


Desiccated Coconut - 250 Gms
Condensed Milk - 1 Cup

Instruction


Heat a non stick pan or kadai and roast desiccated coconut till it slightly changes color. Keep the flame on low.

Now add condensed milk to the pan. Mix well. Switch off the flame.

Let it cool down a bit or till you can handle the heat.

Now take a spoonful of coconut mixture on you palm and make a ball shape. Take some desiccated coconut in a plate for coating and roll the ball in it. Transfer it to a plate.

Continue the same procedure with rest of the mixture.

Your Coconut Ladoo is ready to serve.

Note:

  • You can add in some cardamom powder or nuts if you wish.
  • You can even use fresh coconut instead of desiccated coconut.

Eggless Doughnut

Doughnut is one of my and my niece favorite snacks. Whenever there is a doughnut in front of me I just forget everything else and I can never stop at one. First time I had doughnut with my sister and niece at a doughnut shop 'Mad Over Donut'. It was so tasty that I started searching for the recipe on net. I found lot of recipes and decided to make eggless version.

Now I often make this dish at home. You can have it as a snack or as a dessert, its all up to you. Do give it a try and I bet even you can't stop at one.

How To Make Eggless Doughnut?

Eggless Doughnut

Ingredient


All Purpose Flour - 2 Cup
Unsalted Butter - 4 Tbsp
Milk - 3/4 Cup
Sugar - 3 Tbsp
Dry Active Yeast - 1 Tbsp
Salt - 1/4 Tsp (If using salted butter then skip salt)
Oil - For Deep Frying
Dark Chocolate - 100 Gram
Milk Chocolate - 100 Gram

Instruction


In a bowl mix all purpose flour, butter, sugar, yeast and salt. Now add milk little at a time and knead it. Make a soft dough. Now cover the dough with a cling wrap or with a clean cloth and set it aside to rise.

Now knead it again and dust the rolling board with some flour and roll the dough. Keep it 1/2 inch thick.

Now cut it with a doughnut cutter. If you don't have a cutter you can use glass and a small lid of any bottle.

Place the doughnut on a baking tray or any plate and brush it with little oil. Keep it in a warm place to rise.

Now heat a pan and add oil for deep frying. Once the oil is hot drop the doughnuts in the pan. Deep fry it on both the side till it turns  golden brown in color.

Transfer it to a tissue paper.

Now melt the dark chocolate and milk chocolate in a separate bowl in microwave or you can heat a sauce pan, add 1 cup of water and bring it to simmer. Now place the chocolate bowl on sauce pan and melt the chocolate.

Let the chocolate cool down a bit. Dip the doughnut in melted chocolate only on one side till well coated.

Milk Chocolate - 100 Gram

Instruction


In a bowl mix all purpose flour, butter, sugar, yeast and salt. Now add milk little at a time and knead it. Make a soft dough. Now cover the dough with a cling wrap or with a clean cloth and set it aside to rise.

Now knead it again and dust the rolling board with some flour and roll the dough. Keep it 1/2 inch thick.

Now cut it with a doughnut cutter. If you don't have a cutter you can use glass and a small lid of any bottle.

Place the doughnut on a baking tray or any plate and brush it with little oil. Keep it in a warm place to rise.

Now heat a pan and add oil for deep frying. Once the oil is hot drop the doughnuts in the pan. Deep fry it on both the side till it turns  golden brown in color.

Transfer it to a tissue paper.

Now melt the dark chocolate and milk chocolate in a separate bowl in microwave or you can heat a sauce pan, add 1 cup of water and bring it to simmer. Now place the chocolate bowl on sauce pan and melt the chocolate.

Let the chocolate cool down a bit. Dip the doughnut in melted chocolate only on one side till well coated.
